2022 Cabernet Sauvignon
Vineyard: The grapes for our Cabernet Sauvignon are sourced from the Southern end of the Heathcote wine region in the granitic soils of Tooborac. This beautifully crafted wine is a combination of two different clones, each offering their individual varietal characteristics to the blend highlighting pristine blue fruits with underlying savoury nuances.
Harvest : The fruit was hand harvested with separate whole berry ferments for each of the clones. A cool, inoculated ferment allowed the slow extraction of fine tannins and deep dark blue purple colour. The wine was allowed to go through secondary ferment in predominantly French oak to highlight the natural purity of the fruit.
Tasting Note: Dense dark red purple in colour, delivering rich primary blue fruit intensity highlighting violets, blackcurrants and perfumed pot pourri. The palate is generous, rich and layered, with a brooding intensity. There is a savoury complexity that keeps the wine upright and structured, enhancing the mature tannin definition and perfectly balanced flavour profile.
Cellaring: Drink now or be rewarded with careful cellaring for 10+ years.
